Peanut Butter Banana Oat Chocolate Chip Cookies

It has been raining for days in Boston and in an effort to embrace the weather as cozy and comforting as opposed to annoying and difficult, I made cookies. Really, really good cookies. These guys are so rich and satisfying they leave you wanting nothing more. xo
Makes 2 Dozen
3 Large Ripe Bananas, smashed
1 Tablespoon Vanilla Extract
1/4 Cup vegetable Oil
1/4 Cup Maple Syrup
1/2 Cup Crunchy Organic Peanut Butter
1/2 Cup Whole Wheat Pastry Flour
2 Cups Rolled Oats
1/2 Tsp Salt
1/2 Tsp Baking Powder
1/4-1/2 Cup Chocolate Chips
Preheat Oven to 350 degrees. Mix wet ingredients together with a hand mixer until smooth and creamy. Mix dry ingredients together until combined. Add dry to wet and mix. Fold in Chocolate. Spoon heaping Tablespoons of dough (will be wet) onto cookie sheets layered with parchment paper. Press down with a back of spoon to flatten slightly. Bake for 15-17 minutes. YUM.
